Why I can’t delete a contributor of a song?
I can edit but not delete.
But if I want to delete a performer, I can do it.
I don’t know why.

In your case, since the release has already been delivered to the shops, you need to request the modification from your account. You cannot just remove a contributor from your dashboard!

Anyway, without having to pay the 10€, I have managed to change the contributor from ‘composer’ to ‘arranger’, will that be reflected in Spotify? Or is it necessary to pay?

No it won’t be reflected on Spotify because, as I told you, you need to pay in order to modify releases that have already been delivered to the shops
